☀️ RED BELL PEPPER HUMMUS - Members Recipe Video
Red Bell Pepper Hummus
Ingredients:
2 red bell peppers
1 can chickpeas
1/3 cup fresh squeezed lemon juice (approx. 2 lemons)
1/4 cup sesame tahini
2-3 garlic cloves
1 tsp sea salt + to taste
1/2 tsp cumin
1 can great northern beans
extra virgin olive oil
za'atar
Instructions:
Roast bell peppers over an open flame until skin is fully charred
Transfer bell peppers to a container with a lid. Place lid on and let skins steam off for approx. 30 minutes.
Remove the lid and use your hands to peel off the skin.
Add bell peppers to a high-powered blender like a Vitamix.
Add 1 can chickpeas
Add lemon juice
Add tahini
Add garlic cloves
Add 1/2 tsp salt and cumin
Blend
Now, add 1 can great northern beans with brine removed
Add additional 1/2 tsp salt
Blend and season to taste.
Transfer for a container with a lid and store overnight to thicken. Garlic flavor will develop as it chills.
The following day, serve with a drizzle of extra virgin olive oil and a sprinkle of za'atar, if desired.
