☀️ RED BELL PEPPER HUMMUS - Members Recipe Video

Red Bell Pepper Hummus

Ingredients:

  • 2 red bell peppers

  • 1 can chickpeas

  • 1/3 cup fresh squeezed lemon juice (approx. 2 lemons)

  • 1/4 cup sesame tahini

  • 2-3 garlic cloves

  • 1 tsp sea salt + to taste

  • 1/2 tsp cumin

  • 1 can great northern beans

  • extra virgin olive oil

  • za'atar

Instructions:

  • Roast bell peppers over an open flame until skin is fully charred

  • Transfer bell peppers to a container with a lid.  Place lid on and let skins steam off for approx. 30 minutes.

  • Remove the lid and use your hands to peel off the skin.

  • Add bell peppers to a high-powered blender like a Vitamix.

  • Add 1 can chickpeas

  • Add lemon juice

  • Add tahini

  • Add garlic cloves

  • Add 1/2 tsp salt and cumin

  • Blend

  • Now, add 1 can great northern beans with brine removed

  • Add additional 1/2 tsp salt

Blend and season to taste.

Transfer for a container with a lid and store overnight to thicken.  Garlic flavor will develop as it chills.

The following day, serve with a drizzle of extra virgin olive oil and a sprinkle of za'atar, if desired.
